Black bean is popular and widely used in Chinese cooking especially the fermented black bean. We used the black bean as seasoning to cook many types of dishes thus the black bean sauce is easily available in Asia supermarkets.
This ready-made sauce can be used for seasoning for meat or seafood stir-frying or steaming. Thus prepare a bottle of it the freight is always useful. Many times, whenever I wanted a fast meal, I just used this sauce stir-fry with whatever meat I have (pork, fishes, ..etc) and some cut/chopped vegetables and goes with steamed rice, it is a fast and healthy meal.
- 5 tablespoon oil
- 1 packet fermented black bean (62.5 g) soaked, minced
- 8 shallots, chopped
- 4 pips garlic, chopped
- 1/2 tablespoon black pepper sauce
- 1 tablespoon round black pepper
- 1/2 teaspoon sugar
- 1 teaspoon salt
Heat up oil and sauté in chopped shallots and garlic till fragrant. Add in fermented black bean and stir-fry until aromatic. Add in the remaining ingredients and stir well.
Cooking Time 20 minutes.
Storage period Good for 3 months under refrigeration.
